A beautiful, eat-it-with-a-spoon fresh tomato sauce with last of the season’s tomatoes.

Ingredients
  1. Fresh Tomatoes, 10-15 large, diced
  2. Garlic, 1 head, peeled and minced
  3. Onion, 2, chopped
  4. Basil, 7-10 large leaves
  5. Olive oil, 1/4 cup
  6. Salt, to taste
Instructions
  1. Set SmartHub to 130ºF
  2. (Optional) Boil a pot of water and drop tomatoes for a minute before removing (this will help you remove the skins)
  3. Dice tomatoes, mince garlic, and chop onions
  4. Add olive oil and onions to a pan on medium high heat, sauté until lightly browned
  5. Add half of the tomatoes to the pan and lower heat to medium low, cook for 1 hour
  6. Put remaining tomatoes in a Vac-Snap bag with basil and lower into preheated SmartHub for 1 hour
  7. After 1 hour, remove bag from SmartHub and strain liquid into a pan to reduce until thick
  8. Combine all ingredients and blend to your satisfaction
