Place brisket and any remaining spice mix into a Vac-Snap bag and place in SmartHub for 36 hours (feel free to go a full 2 days)
Set SmartHub to 87ºF, insert steam pan
Combine all focaccia ingredients by hand or with a mixer (food processor is fastest)
Spread out on parchment paper on steam pan in SmartHub for 4 hours
Transfer to baking sheet and pour additional oil liberally on top, let rise for 1.5 hours
Set oven to 400ºF
Dimple with finger tips (about one poke every 1-2 inches), and place in oven until golden brown (about 15 minutes, check after 8 and rotate to promote evenness of baking).
Glazed Onions Instructions
Slice onions and sauté in a pan on a medium-high stove with butter until limp and taking on some color
Add wine, sugar, and salt and reduce until syrupy
Cut focaccia into rectangles (this will dictate the size of your sandwich)
Slice brisket against the grain
Layer on onions and cheese, with the latter on top
Leaving the top piece of focaccia off, place the sandwich into the oven (or toaster oven) set to broil to melt the cheese (Don’t walk away! Broiling goes from sorta-melting to black and smoking in seconds!)
Remove from oven, and top it off with another slice of focaccia
