Ingredients

  2. 1 Brisket (The Point)
  3. 3 TB Salt
  4. 1 TB Black Pepper
  5. 1 tsp Cayenne Pepper
  6. 1 TB Paprika
  7. 1 TB Garlic Powder
  8. 1 TBOnion Powder
  9. Focaccia Ingredients
  10. 3 cups All-Purpose Flour
  11. 1 cup Water
  12. 1/4 cup Olive Oil
  13. 1 Sprig, finely chopped Rosemary
  14. 2 tsp Salt
  15. 1/2 tsp Yeast
  16. Glazed Onions Ingredients
  17. 2 Large Onions
  18. 3 TB Butter
  19. 1/2 cup Red Wine
  20. 1/4 cup Sugar
  21. 2 tsp Salt
  22. You Will Also Need
  23. Jarlsberg, or Munster Cheese for Melting
Instructions
  1. Brisket Instructions
  2. Preheat SmartHub to 140ºF
  3. Mix spices together and rub on brisket
  4. Place brisket and any remaining spice mix into a Vac-Snap bag and place in SmartHub for 36 hours (feel free to go a full 2 days)
  5. Focaccia Instructions
  6. Set SmartHub to 87ºF, insert steam pan
  7. Combine all focaccia ingredients by hand or with a mixer (food processor is fastest)
  8. Spread out on parchment paper on steam pan in SmartHub for 4 hours
  9. Transfer to baking sheet and pour additional oil liberally on top, let rise for 1.5 hours
  10. Set oven to 400ºF
  11. Dimple with finger tips (about one poke every 1-2 inches), and place in oven until golden brown (about 15 minutes, check after 8 and rotate to promote evenness of baking).
  12. Glazed Onions Instructions
  13. Slice onions and sauté in a pan on a medium-high stove with butter until limp and taking on some color
  14. Add wine, sugar, and salt and reduce until syrupy
  15. Reserve
  16. Sandwich Instructions
  17. Cut focaccia into rectangles (this will dictate the size of your sandwich)
  18. Slice brisket against the grain
  19. Layer on onions and cheese, with the latter on top
  20. Leaving the top piece of focaccia off, place the sandwich into the oven (or toaster oven) set to broil to melt the cheese (Don’t walk away! Broiling goes from sorta-melting to black and smoking in seconds!)
  21. Remove from oven, and top it off with another slice of focaccia
