Ingredients
- Brisket Ingredients
- 1 Brisket (The Point)
- 3 TB Salt
- 1 TB Black Pepper
- 1 tsp Cayenne Pepper
- 1 TB Paprika
- 1 TB Garlic Powder
- 1 TBOnion Powder
- Focaccia Ingredients
- 3 cups All-Purpose Flour
- 1 cup Water
- 1/4 cup Olive Oil
- 1 Sprig, finely chopped Rosemary
- 2 tsp Salt
- 1/2 tsp Yeast
- Glazed Onions Ingredients
- 2 Large Onions
- 3 TB Butter
- 1/2 cup Red Wine
- 1/4 cup Sugar
- 2 tsp Salt
- You Will Also Need
- Jarlsberg, or Munster Cheese for Melting
Instructions
- Brisket Instructions
- Preheat SmartHub to 140ºF
- Mix spices together and rub on brisket
- Place brisket and any remaining spice mix into a Vac-Snap bag and place in SmartHub for 36 hours (feel free to go a full 2 days)
- Focaccia Instructions
- Set SmartHub to 87ºF, insert steam pan
- Combine all focaccia ingredients by hand or with a mixer (food processor is fastest)
- Spread out on parchment paper on steam pan in SmartHub for 4 hours
- Transfer to baking sheet and pour additional oil liberally on top, let rise for 1.5 hours
- Set oven to 400ºF
- Dimple with finger tips (about one poke every 1-2 inches), and place in oven until golden brown (about 15 minutes, check after 8 and rotate to promote evenness of baking).
- Glazed Onions Instructions
- Slice onions and sauté in a pan on a medium-high stove with butter until limp and taking on some color
- Add wine, sugar, and salt and reduce until syrupy
- Reserve
- Sandwich Instructions
- Cut focaccia into rectangles (this will dictate the size of your sandwich)
- Slice brisket against the grain
- Layer on onions and cheese, with the latter on top
- Leaving the top piece of focaccia off, place the sandwich into the oven (or toaster oven) set to broil to melt the cheese (Don’t walk away! Broiling goes from sorta-melting to black and smoking in seconds!)
- Remove from oven, and top it off with another slice of focaccia
