A beautiful, eat-it-with-a-spoon fresh tomato sauce with last of the season’s tomatoes.

Ingredients
- Fresh Tomatoes, 10-15 large, diced
- Garlic, 1 head, peeled and minced
- Onion, 2, chopped
- Basil, 7-10 large leaves
- Olive oil, 1/4 cup
- Salt, to taste
Instructions
- Set SmartHub to 130ºF
- (Optional) Boil a pot of water and drop tomatoes for a minute before removing (this will help you remove the skins)
- Dice tomatoes, mince garlic, and chop onions
- Add olive oil and onions to a pan on medium high heat, sauté until lightly browned
- Add half of the tomatoes to the pan and lower heat to medium low, cook for 1 hour
- Put remaining tomatoes in a Vac-Snap bag with basil and lower into preheated SmartHub for 1 hour
- After 1 hour, remove bag from SmartHub and strain liquid into a pan to reduce until thick
- Combine all ingredients and blend to your satisfaction
