Ingredients
  1. Butter 2 sticks
  2. Egg yolks 4
  3. Shallots 1
  4. Dry white wine 1 cup
  5. Tarragon 2 large sprigs
  6. Lemon 1 TB + more to taste
  7. White Vinegar 1 TB + more to taste
  8. Salt pinch + more to taste
  9. Pepper pinch + more to taste
  10. Dijon mustard 2 tsp + more to taste
Instructions
  1. Preheat filled SmartHub to 150ºF
  2. Reduce to 1/4: finely chopped shallots, cup of dry white wine, and chopped tarragon
  3. Pour into a vac-snap bag: All ingredients, including wine, shallots, and tarragon reduction
  4. Place in SmartHub for 40 min.
  5. Remove, shake to emulsify, serve.
