Ingredients
- Half & Half 2 quarts
- Sugar 3 cups
- Large Egg Yolks 14
- Vanilla beans 3 pods
- Salt Heavy pinch
- Grapefruit zest 1/2 zested
- Cinnamon sticks 2
- Nutmeg 1/2 tsp
- Brandy 5 shots
- Bourbon 2 shot
- Dark Rum 1 shot
Instructions
- Fill SmartHub with water and set temperature to 185°F.
- Split the vanilla beans lengthwise and add half & half, sugar, salt, nutmeg, grapefruit zest, cinnamon sticks, and egg yolks to a vac-snap bag—seal and shake to combine, then add to the preheated SmartHub for 1 hour.
- Remove bag and refrigerator overnight, or until cool to the touch.
- Add alcohol (if desired) and serve
